Why do we throw away our banana skins? We are wasting nearly 37% of the total weight of the fruit - that's over one third in the bin! Read on to follow my mission to explore the many ways we can use the humble banana skin in cooking. Not only discovering delicious food, but also doing my bit to reduce food waste. Being virtuous never tasted so good!
