About The Full Banana Kitchen

I was sat with my husband watching Aldi's Next Big Thing on the telly when they started talking about banana waste. I was horrified by how many bananas we throw away in the UK because they aren't perfect. Trying to think of ways waste could be reduced I came up with the idea of making banana caramel. I had ideas about trying to go around and collect waste bananas from my local area and make them into caramel. Maybe that will still happen, I don't know. However, my caramel recipe needs a LOT of refinement. While researching recipes I realised that there is so much yummy food that can be made using the whole banana. Throwing away 37% of what we are buying is both bad for the earth and a waste of pennies. This blog is to document my journey exploring what we can cook and other ways to reduce banana waste.
